Creamy White Chicken Chili



It is cold in Pittsburgh. The temperature this morning was 10 degrees. That said, it is officially soup season and I consider myself a bit of a soup addict. My sister and I will meet for lunch dates and rather than choose a restaurant, oftentimes we find ourselves declaring "SOUP" and then going from there. It's probably the warmth and ease of whipping up a half-decent batch of chicken noodle soup in a hurry, but the past few years, my husband and I have depended on relatively simple soup recipes for an easy weeknight meal. Last night, we made this recipe (courtesy of the eat, live, run blog - an old favorite!) for Creamy White Chicken Chili, one of our absolute favorites. Everything can be found at your local Trader Joe's and it comes together pretty quickly, makes for great lunch leftovers and you can top it with as much shredded cheddar cheese and sour cream as you see fit, which is always a win in my book.
